Baked Sausages With Kale, Apple, and Onion
Easy baked sausages with kale, apple, and onion recipe. This healthy sausage recipe is perfect for a hands-off weeknight meal.
- 1 bunch kale, thinly sliced crosswise
- 1 onion, thinly sliced
- 1 apple, core removed, thinly sliced
- 3 tbsp olive oil
- 1 tbsp white wine vinegar
- 1 tsp kosher salt
- 1 pound sausage of your choice, pricked a few times with a knife (spicy chicken was used here)
Preheat oven to 400F.
Add sliced kale, onions, and apple to a 9x13 inch baking dish. Toss with 2 tbsp olive oil, white wine vinegar and kosher salt.
Lay the sausages on top of the dish and nestle into the contents a bit. Pour remaining 1 tbsp olive oil over the dish.
Transfer dish to oven and bake until sausages are cooked through 25-30 minutes. Serve with a grain or beans.
Sausage type: You can use any type of chicken, turkey, or pork sausage for this recipe. Chicken and turkey is leaner and healthier. Regardless of the cut of meat, I prefer some sort of spicy version.
Well done veggies: If you find that the kale, onions, and apple aren't as done to your liking after 30 minutes, remove the sausage from the pan and set aside. Put the pan back in the oven and bake for 5 more minutes without the sausage.
Serving suggestions: To round out this meal, serve alongside a healthy grain like farro, brown rice, quinoa, or millet. Alternatively, serve with a can of rinsed beans like chickpeas or cannellini. Whichever you choose, they will soak up the juices from the dish nicely.
Using a baking sheet: If you don't have a baking dish, you can use a baking sheet. Be sure to check after 25 minutes of baking because it may cook faster since the ingredients won't be piled on top of each other as much.
