Vegan Black Bean Patties
Vegan black bean patties recipe to satisfy your veg burger fix. These vegan patties are perfect with a creamy sauce, in a wrap, or over a bowl of greens.
- 1 pound sweet potatoes (about 1 large or 2 small), halved and pricked all over with a fork
- 2 cans black beans, drained and rinsed (or 3 cups cooked beans)
- 1 tsp paprika
- 1/4 tsp cayenne or chili powder (optional)
- 1/4 small onion, finely chopped
- 2 cloves garlic, grated
- 3 tbsp olive oil
- kosher salt
Preheat oven to 400 degrees F.
Rub sweet potato(es) all over with 1 tbsp oil and a few pinches of salt. Place them cut side down on a rimmed baking sheet. Roast 25-30 minutes until you can slide a fork into them.
Add black beans to a large bowl. Use a potato masher or fork to smash the black beans until many of them are broken up. It's okay if there are still a lot of whole beans.
Scoop the sweet potato from its skin, add it to the bowl with beans. Mash the sweet potato and mix it into the beans.
Add the paprika, cayenne (if using), onion, and garlic. Mix to combine. Season with salt depending on the amount of salt in your canned beans.
Drizzle 2 tbsp oil over a baking sheet use your hand or spoon to coat the entire sheet. Use a 1/2 cup measuring cup to scoop out the mixture. You should measure a little less than fills the cup to get 8 patties. Place each scoop on the oiled baking sheet and press down to flatten to about 1 inch thick.
Bake patties 40-45 minutes until browned. Flip halfway through baking. Store covered in the refrigerator 3-4 days.
Spiciness: Adjust the amount of cayenne/chili powder to control the spiciness of the dish. You can go up to 1 tsp if you want these really spicy.
Sodium: Adjust seasoning based on the amount of salt in your canned beans. Some canned beans already have a high amount of sodium, so you do not need to add much salt to this dish. If you are using beans with no added salt, then you will need to add salt to your mixture prior to shaping.
