Crispy Roasted Chickpeas
Delicious crispy roasted chickpeas recipe for crunchy, bite sized snacks every time. This chickpea recipe is the perfect healthy vegan snack, salad topper, or sandwich addition.
- 1 can chickpeas, drained and rinsed (1.5 cups)
- 1 tsp. kosher salt
- 1 Tbsp. olive oil
- 1/2 tsp. paprika (optional)
- 1/2 tsp. cumin (optional)
Preheat oven to 400 degrees.
Pat and roll chickpeas in a kitchen towel to dry. Remove any skins that have fallen off and place on baking sheet.
Toss chickpeas with olive oil and salt. Place in preheat oven and roast 30 minutes, shaking the pan halfway through cooking.
Remove pan from oven and toss with spices (if using) while still warm. Let cool on baking sheet for 5-10 minutes.
Eat immediately or transfer to a jar, storage container, or bag with a lightly cracked lid. Store at room temperature. Chickpeas are best within the first day or so, but will last 4-5 days.
Variations: Use a different spice or spice mixture to season your chickpeas after roasting. Here are a few ideas:
- 1/2 tsp. garlic powder
- 1 tsp. Chinese 5 spice, curry powder or za’atar
- Or 1 tsp. of another seasoning of your choice
