Ingredients
  

  • 2 pounds sweet potatoes (about 2-3), cut into 1 inch pieces
  • 2 Tbsp. olive oil
  • 1 tsp. kosher salt

Instructions
 

  • Preheat oven to 425 degrees.
  • Toss sweet potatoes, oil, and salt on a rimmed baking sheet. Roast, tossing every 15 minutes until sweet potatoes are browned and tender, 35-45 minutes.
