Ingredients
  

  • 1 1/2 cups olive oil (preferably extra virgin)
  • 3/4 cup balsamic vinegar
  • 2 Tbsp. Dijon mustard (optional)
  • Kosher salt

Instructions
 

  • Add olive oil, vinegar, Dijon (if using), to a resealable jar large enough to hold 2 1/4 cups.
  • Cover jar and shake for about 20 seconds to emulsify the dressing.
  • Season with salt.
  • Cover and chill for up to 1 month.
  • To reuse, remove from refrigerator, let come to room temperature for the oil to liquify, and shake to re-emulsify.
